There are two popular types of cinnamon- Ceylon (or “true”) cinnamon and Cassia cinnamon. Generally the ground spice found at the grocery store is a combination of the two. Cinnamon is the bark of the cinnamon tree and you can find it dried as “sticks” or powdered.
